Five of the eight indexed materials in this family fell over the past three months. As of 4 November 2026 the family average is down 2.0%, against a 0.8% rise for Ingredients overall, and over one year it is down 2.2%. Ten materials are listed in all.
Pectins weigh most. Pectin, vanilla pectin and Unipectine each show -6.8% on three months and -3.1% on the year, identical moves that put them at the bottom of the family. No market note covers them.
Guar gum comes next, down 4.5% over three months and 7.0% over the year, the steepest annual drop here. Its note, dated 2 November, follows guar gum futures in New Delhi: lower on 30 October, with weak spot demand cited, a day after a rise attributed to larger speculative holdings and firm spot demand. On 13 October, NCDEX November contracts fell on weak spot demand and ample supplies.
Gum arabic stands apart. It slipped 2.2% on three months but is up 10.7% on the year, the only material in the family higher than twelve months ago. The broader gum line has no index; its note repeats the same New Delhi and NCDEX sessions as the guar gum note.
On the rising side, caramel coloring and ammonia caramel gained 4.4% over three months while remaining 5.3% lower over the year. Beeswax added 2.6% on three months and is 1.6% down on the year. Those three are the only risers.
The additives note, also without an index, is industrial and regulatory. On 28 October, Meala FoodTech sharply expanded capacity in France and Germany for pea proteins used as egg replacers in bakery and as texture additives in meat alternatives. On 10 August, US health officials proposed that food companies disclose more about new additives, and on 18 August Europe updated its reference text on additives for beer, wine and spirits.
