Risers outnumber fallers ten to six in this family over three months, and the average gain is 1.7% as of 4 November 2026, well above the 0.8% average for Ingredients. Over one year the family is 1.1% lower on average. The spread between materials is wide, and it runs along crop lines: tapioca at the top, potato at the bottom.
Tapioca starch leads with +11.5% on three months and +15.2% on the year, followed by tapioca flour at +9.0% and +12.5%. Neither has a market note, so the figures stand alone. Potato flour is the mirror image, down 11.6% over three months and 15.7% over the year, also without a note.
Potato starch fell a more modest 2.4% over three months but is 21.8% lower than a year ago, the deepest annual fall in the family. Its note, dated 2 November, says potato starch prices were described as stable in reports of 27 and 30 October, and that when the starch-potato campaign opened on 27 August, starch potato prices were reported sharply lower.
Wheat flour is up 4.3% on three months and 1.0% on the year. Its note gathers price news from outside Europe: on 21 October Israeli flour mills announced an increase they attributed to the Russia-Ukraine war, and on 8 October flour prices rose in Karachi. Rye flour (+4.8%) and polenta (+4.7%) did slightly better over three months, with no notes.
Among the other starches, corn starch gained 2.1% on three months and 4.4% on the year; its older note, dated 6 October, described a US market entering October supported by demand and lower corn costs. Wheat starch slipped 0.9% and 4.3%. Yeasts eased too, with pastry yeast at -1.7% and active dry yeast at -1.6% over three months.
Buckwheat flour has no index. Its note reports that on 18 September the Breton sector warned of very low buckwheat yields and a possible shortage of Breton pancakes.
